Ingredients
  

  • 4.5 cups freshly milled whole wheat flour
  • 2 cups warm water
  • 1 tablespoon instant yeast
  • 1/4 cup honey
  • 1/4 cup olive oil
  • 1.5 teaspoons salt

Method
 

Preparation
  1. Combine warm water and instant yeast in a large mixing bowl, then rest the mixture for about 5 minutes until it becomes bubbly.
  2. Mix honey, olive oil, and salt into the yeast mixture until evenly combined.
  3. Add whole wheat flour gradually and stir until a rough dough forms.
  4. Knead the dough on a lightly floured surface for 8-10 minutes until it becomes smooth and elastic.
Rising
  1. Transfer the dough to a greased bowl, cover with a clean kitchen towel, and allow it to rise in a warm, draft-free area for 1-2 hours until doubled in size.
  2. Gently deflate the risen dough, shape it into a loaf, and place it in a greased bread loaf pan.
  3. Let the shaped loaf rise for 30-45 minutes until doubled in size.
Baking
  1. Preheat the oven to 350°F / 175°C.
  2. Bake the loaf for 30-35 minutes until it sounds hollow when tapped on the bottom.
  3. Remove the bread from the pan and cool completely on a cooling rack before slicing.

Notes

Store the loaf in a bread box or paper bag for 2-3 days, or slice it and freeze it for longer storage.
