Ingredients
  

Coleslaw
  • 1 medium green cabbage, finely shredded
  • 1 cup shredded carrots
  • 1 medium red cabbage, finely shredded (optional)
Dressing
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon celery seed
  • Salt, to taste
  • Black pepper, to taste

Method
 

Preparation
  1. Add the shredded green cabbage, optional red cabbage, and shredded carrots to a large mixing bowl.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, and celery seed until the dressing is smooth and the sugar has dissolved.
  3. Pour the dressing over the vegetables and gently mix until the cabbage and carrots are evenly coated.
  4. Season the coleslaw with salt and black pepper according to taste.
Chilling and Serving
  1. Cover the bowl and refrigerate the coleslaw for at least 1 hour to help the flavors blend and slightly soften the cabbage.
  2. Serve the coleslaw cold.

Notes

Dry shredded cabbage with a clean towel before combining the ingredients to help reduce excess liquid in the dressing.
