Preparation
- Separate the eggs, keeping the yolks and whites in separate bowls.

- Mix the melted butter into the batter.
- Beat the egg whites for about 1 minute until soft peaks develop.
- Carefully fold the whipped egg whites into the batter until evenly incorporated.
Cooking
- Warm a lightly greased griddle to 400°F / 205°C.
- Spoon batter onto the heated griddle and cook for about 3 minutes, until bubbles appear across the surface.
- Turn the pancakes over and cook for about 2 minutes more, until browned and fully set.
- Serve the pancakes immediately.
