Ingredients
  

French Toast
  • 3 large croissants, a few days stale
  • 3 eggs
  • 3/4 cup milk
  • 3 tablespoons Greek yogurt
  • 1/4 cup sugar
  • 1/2 tablespoon vanilla extract
Cinnamon Crumb Topping
  • 3 tablespoons flour
  • 1/4 cup brown sugar
  • Cinnamon, to taste
  • Pinch of salt
  • 3 tablespoons cold butter, cut into small pieces
Greasing
  • Butter, for greasing the baking pan

Method
 

Preparation
  1. Coat a small baking pan with butter.
  2. Tear the croissants into small pieces and place them evenly in the prepared pan.
  3. Whisk the eggs, milk, Greek yogurt, sugar, and vanilla extract together until the custard is smooth.
  4. Pour the custard over the croissant pieces, making sure they are evenly covered.
  5. Cover the pan and refrigerate for several hours or overnight.
Topping
  1. Combine the flour, brown sugar, cinnamon, and salt to prepare the crumb topping mixture.
  2. Work the cold butter into the flour mixture until coarse crumbs form.
Baking
  1. Preheat the oven to 350°F / 175°C.
  2. Scatter the cinnamon crumb topping over the soaked croissants.
  3. Bake for 30-45 minutes, until the center is set and a knife inserted near the middle comes out mostly clean.
  4. Allow the baked French toast to rest for 10-15 minutes before serving.
Serving
  1. Serve warm with a pat of butter and a drizzle of maple syrup if desired.

Notes

Use stale croissants so they can absorb the custard while maintaining a soft center and crisp edges.
