  • 1 pound fresh chicken livers
  • 2 large yellow onions
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 2 cloves garlic, minced
  • Fresh thyme leaves

Preparation
  1. Clean the chicken livers and dry them thoroughly to remove excess moisture.
  2. Cut the yellow onions into thin rings.
Cooking
  1. Melt the butter in a large skillet over medium-low heat.
  2. Add the onions and cook for 20-25 minutes, stirring occasionally, until they become deeply caramelized.
  3. Transfer the caramelized onions out of the skillet and set them aside.
  4. Raise the skillet heat to medium-high and sear the chicken livers for 2-3 minutes per side, adding salt, black pepper, and minced garlic while they cook.
  5. Return the caramelized onions to the skillet with the chicken livers and gently combine the ingredients.
  6. Add fresh thyme leaves and serve warm over toasted crusty bread or with a fresh green salad.
