Ingredients
  

Noodles
  • 1 teaspoon olive oil
  • 1 clove garlic, minced
  • 2 cups chicken broth
  • 1/2 lb egg noodles
  • 1/2 tablespoon cornstarch
  • 3 tablespoons cold water
  • 12 oz cooked, shredded chicken breast (340 g)
Cheese Sauce
  • 1 tablespoon butter
  • 2 tablespoons milk
  • 1/2 cup shredded cheese, such as Cheddar and Monterey Jack
Topping
  • Crumbled bacon or breadcrumbs for topping

Method
 

Cooking
  1. Warm olive oil in a pan over medium heat and cook the minced garlic until softened and fragrant.
  2. Pour in the chicken broth and bring it to a boil.
  3. Add the egg noodles and cook for 8-10 minutes until they are just barely tender.
  4. Combine the cornstarch and cold water, stirring until smooth to create a slurry.
  5. Mix the slurry into the boiling noodles and continue cooking for about 1 minute until the broth thickens.
  6. Take the pan off the heat and stir in the shredded chicken breast.
  7. Keep the noodles undrained and allow the mixture to rest for about 5 minutes so the sauce can thicken.
Finishing
  1. Place the pan back over low heat and add the butter, milk, and shredded cheese.
  2. Stir gently for 3-4 minutes until the cheese has melted and evenly coats the noodles.
  3. Finish with crumbled bacon or breadcrumbs on top and serve immediately.

Notes

Add the cheese while the pan is over low heat to help keep the sauce smooth and prevent a grainy texture.
