Vegetables
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large orange bell pepper, cut into 1-inch pieces
  • 1 red onion, peeled and cut into 1-inch pieces
  • 1 medium zucchini, cut into 1-inch pieces
Seasoning
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1 pinch black pepper
Chicken Sausage
  • 12 oz / 340 g chicken sausage, sliced into 3/4-inch rounds

Method
 

Preparation
  1. Place the red bell pepper, orange bell pepper, red onion, and zucchini in a large bowl and coat them with avocado oil.
  2. Combine the garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper, then distribute the seasoning mixture evenly over the vegetables.
  3. Add the sliced chicken sausage to the seasoned vegetables and mix until combined.
  4. Preheat the air fryer if needed to 390°F / 199°C and lightly spray the basket with cooking spray.
Cooking
  1. Spread the chicken sausage and vegetables in a single layer in the air fryer basket, cooking in batches if necessary.
  2. Air fry for 10 minutes, shaking the basket or turning the ingredients halfway through the cooking time.
  3. Serve the cooked chicken sausage and vegetables hot with cauliflower rice or brown rice if desired.

Notes

Cut the vegetables into similar sizes and keep the air fryer basket from becoming overcrowded to encourage even browning of the sausage and vegetables.
