- Heat the oven to 350°F (175°C).
- Combine the sugar, softened butter, milk, egg, vanilla extract, and lemon zest, mixing until blended.
- In a separate bowl, sift the flour, baking powder, and salt together.
- Add the dry mixture to the wet mixture and stir just until combined, keeping the batter thick but easy to scoop.
- If the batter is too firm to scoop, mix in a small amount of additional milk.
- Fold the white chocolate pieces and fresh blueberries into the batter gently to keep the berries intact.
- Divide the batter evenly among the greased muffin cups.
- Bake for 13-15 minutes, until a toothpick inserted near the center comes out with a few moist crumbs and no wet batter.
- Let the muffins cool briefly in the pan, then move them to a rack to cool completely.
