  • 1/4 cup softened butter
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
Dry ingredients
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt

  • 1/2 cup white chocolate pieces
  • 3/4 cup fresh blueberries

Method
 

Preparation
  1. Heat the oven to 350°F (175°C).
  2. Combine the sugar, softened butter, milk, egg, vanilla extract, and lemon zest, mixing until blended.
  3. In a separate bowl, sift the flour, baking powder, and salt together.
  4. Add the dry mixture to the wet mixture and stir just until combined, keeping the batter thick but easy to scoop.
  5. If the batter is too firm to scoop, mix in a small amount of additional milk.
  6. Fold the white chocolate pieces and fresh blueberries into the batter gently to keep the berries intact.
  7. Divide the batter evenly among the greased muffin cups.
  8. Bake for 13-15 minutes, until a toothpick inserted near the center comes out with a few moist crumbs and no wet batter.
  9. Let the muffins cool briefly in the pan, then move them to a rack to cool completely.

Notes

Use room-temperature eggs and softened butter, and avoid overmixing once the flour is added to help keep the muffins tender.
