Filling
  • 1 lb chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 16 oz (454 g) fresh salsa
  • 3 tablespoons taco seasoning
  • 1/4 cup water, optional
Enchiladas
  • 12 small corn tortillas
  • 1 cup shredded cheddar cheese
Toppings
  • 1 avocado, diced
  • 1/4 cup crema
  • Fresh cilantro
  • Cotija cheese for topping

Method
 

Cooking
  1. Place chicken breasts, black beans, corn, salsa, taco seasoning, and water if needed into a crockpot.
  2. Cook on high for about 3 hours or on low until the chicken is fully cooked and reaches 165°F (74°C).
  3. Shred the cooked chicken and mix it with the beans, corn, and salsa mixture.
Assembly
  1. Preheat the oven to 400°F (200°C).
  2. Heat the corn tortillas in microwave batches of three for about 25 seconds to make them flexible.
  3. Add a few tablespoons of the chicken, black bean, and corn filling to each tortilla, roll tightly, and place seam-side down in a large baking dish.
  4. Arrange the rolled enchiladas close together to help keep them sealed while baking.
  5. Spread the shredded cheddar cheese evenly over the enchiladas.
Baking
  1. Bake the enchiladas for 15 to 20 minutes until the cheese has melted and the filling is heated through.
Topping
  1. Drizzle the baked enchiladas with crema.
  2. Finish with diced avocado, fresh cilantro, and Cotija cheese crumbles before serving.

Notes

Warm the corn tortillas before filling and rolling to make them easier to handle and help prevent cracking or tearing.
