Preparation
- Heat the oven to 400°F / 205°C and get a muffin tin ready.
- Combine the flour, baking powder, baking soda, salt, cocoa powder, and sugar in a large bowl.
- Add the milk, coffee, vegetable oil, egg, and vanilla to the dry mixture.
- Stir the ingredients together just until combined and no dry flour remains.
- Gently mix the chocolate chips into the batter.
- Portion the batter into the muffin cups, filling each one about 3/4 full.
- Add extra chocolate chips over the top of each muffin.
Baking
- Bake the muffins for about 15 minutes, until the tops spring back when lightly touched.
Glaze and Topping
- Whisk the powdered sugar, cocoa powder, and milk together until smooth to create the glaze.
- If needed, thin the glaze by mixing in additional milk one teaspoon at a time.
- Let the muffins cool, then drizzle with glaze and finish each top with a small pinch of coarse sea salt.
Notes
Cool the muffins before adding the glaze so it remains on the tops.
