Cake Batter
  • 2 1/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 3/4 cup butter, softened
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup sour cream
  • 2 large eggs, divided
Cream Cheese Filling
  • 8 oz / 225 g (227 g) cream cheese, softened
  • 1/4 cup granulated sugar
Raspberry Jam
  • 1/2 cup raspberry jam

Method
 

Preparation
  1. Heat the oven to 350°F / 175°C and lightly grease a 9x13-inch baking pan.
  2. Blend the flour, 3/4 cup sugar, and softened butter together until coarse crumbs form.
  3. Set aside 1 cup of the crumb mixture to use as the topping.
  4. Combine the remaining crumb mixture with baking powder, baking soda, salt, sour cream, and 1 egg, mixing until the batter is mostly smooth.
  5. Spread the batter evenly into the prepared 9x13-inch pan.
Filling
  1. Beat the softened cream cheese with 1/4 cup sugar and 1 egg until smooth.
  2. Spread the cream cheese mixture over the batter layer in the pan.
  3. Add raspberry jam over the cream cheese layer and gently swirl it with a knife to create a marbled effect.
Baking
  1. Sprinkle the reserved crumb mixture evenly over the top of the cake.
  2. Bake for 45 to 55 minutes, until a knife inserted into the cake comes out clean.
  3. Allow the coffee cake to cool for at least 15 minutes before slicing and serving.

Notes

Use butter and cream cheese at room temperature to create a smoother filling and a more evenly textured batter.
