Dough
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar, plus more for coating
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 cup finely ground almonds
  • 1/4 teaspoon salt
Filling
  • 1/2 cup seedless raspberry jam

Method
 

Preparation
  1. Heat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. Beat the softened butter with 1/2 cup powdered sugar in a large bowl until the mixture becomes light and fluffy.
  3. Blend the vanilla extract into the butter mixture.
  4. Combine the flour, finely ground almonds, and salt in a separate bowl.
  5. Add the dry mixture gradually to the butter mixture, mixing just until a dough forms.
  6. Shape a tablespoon of dough into a ball, press a small center indentation, and place 1/4 teaspoon raspberry jam inside.
  7. Seal the dough around the jam, then roll it again into a smooth ball.
  8. Arrange the filled dough balls on the lined baking sheet and bake for 10-12 minutes until lightly golden.
  9. Allow the cookies to cool briefly on the baking sheet before moving them to a wire rack to cool fully.
  10. Coat the cooled cookies in powdered sugar twice for an even finish.

Notes

If the shaped dough becomes too soft to maintain its form, chill it briefly before baking.
