Preparation
- Heat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- Beat the softened butter with 1/2 cup powdered sugar in a large bowl until the mixture becomes light and fluffy.
- Blend the vanilla extract into the butter mixture.
- Combine the flour, finely ground almonds, and salt in a separate bowl.
- Add the dry mixture gradually to the butter mixture, mixing just until a dough forms.
- Shape a tablespoon of dough into a ball, press a small center indentation, and place 1/4 teaspoon raspberry jam inside.
- Seal the dough around the jam, then roll it again into a smooth ball.
- Arrange the filled dough balls on the lined baking sheet and bake for 10-12 minutes until lightly golden.
- Allow the cookies to cool briefly on the baking sheet before moving them to a wire rack to cool fully.
- Coat the cooled cookies in powdered sugar twice for an even finish.
Notes
If the shaped dough becomes too soft to maintain its form, chill it briefly before baking.
