Ingredients

Pumpkin Oatmeal
  • 1/3 cup old-fashioned rolled oats
  • 1/3 cup fiber or bran cereal
  • 1 cup water or milk
  • Pinch of salt
  • 1/4 cup beaten egg whites
  • 1/4 cup pumpkin puree
  • 1 tablespoon brown sugar
  • Pumpkin pie spices (cinnamon, ginger, cloves, and allspice), to taste
Serving
  • Cream, milk, or evaporated milk, optional

Method

Preparation
  1. Add rolled oats, bran cereal, water or milk, and salt to a small saucepan.
  2. Heat the oat mixture to a boil, stirring until it starts to thicken slightly.
  3. Gradually add the beaten egg whites while stirring constantly to blend them in smoothly.
  4. Mix in the pumpkin puree, brown sugar, and pumpkin pie spices, then continue warming until the oatmeal is heated through.
  5. Serve the pumpkin oatmeal hot, adding cream, milk, or evaporated milk if a thinner consistency is preferred.

Notes

Stir continuously when adding the egg whites to maintain a smooth oatmeal texture and help prevent curdling.
