Preparation
- Heat the oven to 350°F / 175°C and grease a 9x13-inch metal baking pan.
- Combine the flour, granulated sugar, brown sugar, baking powder, and salt by sifting them together into a large bowl.
- In another bowl, whisk the eggs, vegetable oil, and drained crushed pineapple until evenly mixed.
- Create a space in the center of the dry mixture, add the pineapple mixture, and fold gently until the batter comes together.
- Spread the batter evenly into the prepared 9x13-inch metal baking pan.
Baking
- Bake the pineapple cake for 25-30 minutes, until a toothpick placed in the center comes out clean.
- Leave the cake in the pan for 10 minutes to cool, then move it to a rack to cool completely before slicing.
Notes
Drain the crushed pineapple thoroughly before mixing it into the batter to help avoid excess moisture and a gummy texture.
