  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
Wet ingredients
  • 1/2 cup vegetable oil
  • 20 oz (567 g) crushed pineapple, drained
  • 3 eggs

Method
 

Preparation
  1. Heat the oven to 350°F / 175°C and grease a 9x13-inch metal baking pan.
  2. Combine the flour, granulated sugar, brown sugar, baking powder, and salt by sifting them together into a large bowl.
  3. In another bowl, whisk the eggs, vegetable oil, and drained crushed pineapple until evenly mixed.
  4. Create a space in the center of the dry mixture, add the pineapple mixture, and fold gently until the batter comes together.
  5. Spread the batter evenly into the prepared 9x13-inch metal baking pan.
Baking
  1. Bake the pineapple cake for 25-30 minutes, until a toothpick placed in the center comes out clean.
  2. Leave the cake in the pan for 10 minutes to cool, then move it to a rack to cool completely before slicing.

Notes

Drain the crushed pineapple thoroughly before mixing it into the batter to help avoid excess moisture and a gummy texture.
