- Preheat the oven to 350°F / 175°C.
- Combine the flour, baking powder, and salt in a bowl and whisk until evenly mixed.
- Add the peanut butter and oil to the dry mixture, then use a fork to blend until the mixture becomes crumbly.
- Pour in the milk and honey, stirring gently just until the batter comes together without overmixing.
- Fill muffin tins about three-quarters full with the batter.
- Bake for 10-12 minutes, until the muffin tops are golden and spring back when lightly touched.
- Let the muffins cool briefly in the tin before moving them to a rack.
Notes
Use milk at room temperature and mix gently after adding the wet ingredients to help keep the muffins tender.
