  • 1 1/2 teaspoons baking powder
  • Pinch of salt
Wet ingredients
  • 3 tablespoons peanut butter, smooth or crunchy
  • 2 tablespoons oil
  • 3 tablespoons honey or agave nectar
  • 3/4 cup milk or almond/soy milk

Preparation
  1. Preheat the oven to 350°F / 175°C.
  2. Combine the flour, baking powder, and salt in a bowl and whisk until evenly mixed.
  3. Add the peanut butter and oil to the dry mixture, then use a fork to blend until the mixture becomes crumbly.
  4. Pour in the milk and honey, stirring gently just until the batter comes together without overmixing.
  5. Fill muffin tins about three-quarters full with the batter.
  6. Bake for 10-12 minutes, until the muffin tops are golden and spring back when lightly touched.
  7. Let the muffins cool briefly in the tin before moving them to a rack.

Notes

Use milk at room temperature and mix gently after adding the wet ingredients to help keep the muffins tender.
