  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Cookie dough
  • 1/2 cup creamy peanut butter
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, lightly packed
  • 1 large egg
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
Coating and chocolate center
  • 1/2 cup granulated sugar, for coating cookies
  • 11 oz / 310 g chocolate kisses

Method
 

Preparation
  1. Combine the flour, baking soda, and salt in a medium bowl and whisk until evenly mixed.
  2. Beat the peanut butter, unsalted butter, granulated sugar, and light brown sugar together until creamy and fully combined.
  3. Add the egg, milk, and vanilla extract, mixing well and scraping the bowl as needed.
  4. Gradually incorporate the flour mixture into the peanut butter mixture until a dough forms.
  5. Cover and chill the cookie dough for at least 1 hour.
Baking
  1. Line baking sheets with parchment paper and preheat the oven to 375°F / 190°C.
  2. Shape the chilled dough into 1-inch balls, coat each ball in the additional granulated sugar, and arrange them on the prepared baking sheets about 1 1/2 to 2 inches apart.
  3. Bake for 7 to 8 minutes, until the cookies are set around the edges.
  4. Immediately press one chocolate kiss into the center of each warm cookie after removing them from the oven.
  5. Place the cookies back in the oven and bake for 2 minutes more.
  6. Allow the cookies to cool on the baking sheet for 5 to 10 minutes before moving them to a cooling rack.

Notes

Chilling the dough for at least 1 hour helps reduce spreading while the cookies bake.
