Preparation
- Combine the flour, baking soda, and salt in a medium bowl and whisk until evenly mixed.
- Beat the peanut butter, unsalted butter, granulated sugar, and light brown sugar together until creamy and fully combined.
- Add the egg, milk, and vanilla extract, mixing well and scraping the bowl as needed.
- Gradually incorporate the flour mixture into the peanut butter mixture until a dough forms.
- Cover and chill the cookie dough for at least 1 hour.
Baking
- Line baking sheets with parchment paper and preheat the oven to 375°F / 190°C.
- Shape the chilled dough into 1-inch balls, coat each ball in the additional granulated sugar, and arrange them on the prepared baking sheets about 1 1/2 to 2 inches apart.
- Bake for 7 to 8 minutes, until the cookies are set around the edges.
- Immediately press one chocolate kiss into the center of each warm cookie after removing them from the oven.
- Place the cookies back in the oven and bake for 2 minutes more.
- Allow the cookies to cool on the baking sheet for 5 to 10 minutes before moving them to a cooling rack.
Notes
Chilling the dough for at least 1 hour helps reduce spreading while the cookies bake.
