Orange Sauce
  • Juice of 1 orange
  • 1 tablespoon fresh orange zest
  • 2 tablespoons low sodium soy sauce
  • 1/4 cup beef broth
  • 1/3 cup orange marmalade
  • 2 tablespoons cornstarch
Beef and Broccoli Stir-Fry
  • 1 teaspoon oil
  • 1 lb (454 g) flank steak, very thinly sliced against the grain
  • 2 cloves garlic, minced
  • 1 head broccoli, washed and cut into bite-sized pieces

Method
 

Preparation
  1. Combine orange juice, orange zest, soy sauce, beef broth, orange marmalade, and cornstarch in a bowl, whisking until the cornstarch is completely incorporated.
  2. Blanch the broccoli in boiling water for a few minutes until it reaches a tender-crisp texture, then drain.
Cooking
  1. Warm the oil in a skillet over high heat.
  2. Add the thinly sliced flank steak and minced garlic to the skillet and cook until the beef is browned. Remove any excess fat from the pan.
  3. Add the orange sauce to the skillet with the beef and stir for about 1 minute, allowing the sauce to thicken.
  4. Take the skillet off the heat and mix in the blanched broccoli until it is evenly coated with sauce.
Serving
  1. Serve the orange beef and broccoli over rice if desired.

Notes

Slice the flank steak very thinly against the grain to help create a more tender texture.
