Ingredients
  

Bulgur and onions
  • 2 tablespoons butter
  • 1/2 large yellow onion, thinly sliced
  • 1 cup uncooked bulgur
  • 2 cups water for cooking bulgur
  • Salt to taste
Salad
  • 2 cups seedless red grapes, washed and halved
  • 2 cups edamame
  • 3/4 cup walnuts
  • Fresh baby spinach
  • Crumbled blue cheese
Dressing
  • 1/4 cup honey
  • 1/4 cup water for dressing

Method
 

Cooking Bulgur and Onions
  1. Melt the butter in a medium saucepan over low heat.
  2. Add the sliced onion and cook over low heat for about 30 minutes, stirring occasionally, until the onion becomes soft and golden.
  3. While the onion cooks, place the bulgur and 2 cups water in a saucepan and bring to a boil.
  4. Cook the bulgur for about 15 minutes, until most of the water is absorbed and the grains are tender.
  5. Allow the cooked bulgur to cool for 15 minutes.
  6. Mix the caramelized onions and remaining butter from the pan into the cooled bulgur, then season with salt.
Assembly
  1. Place the halved grapes and edamame in a large bowl.
  2. Add the bulgur mixture and walnuts to the bowl with the grapes and edamame.
  3. Whisk together the honey and 1/4 cup water, then pour the dressing over the salad and mix until combined.
  4. Gently fold in the fresh baby spinach and crumbled blue cheese just before serving.

Notes

Cool the bulgur completely before mixing it with the spinach to help maintain the leaves' crisp texture.
