Ingredients
  

Roasted broccoli
  • 1 head broccoli, washed and chopped
  • 1 teaspoon oil
  • 1/2 tablespoon dried Italian herbs or 2 tablespoons fresh herbs
Pasta and mushroom garlic butter sauce
  • 8 oz / 225 g whole wheat penne pasta
  • 8 oz / 225 g mushrooms, washed and sliced
  • 3 tablespoons butter
  • 1 tablespoon minced garlic
  • 1/2 tablespoon flour, optional if the mushroom mixture is too watery
  • Sea salt, to taste
  • Black pepper, to taste
Topping
  • Sharp, hard cheese, for topping

Method
 

Preparation
  1. Preheat the oven to 400°F / 200°C.
  2. Coat the chopped broccoli with oil and Italian herbs.
  3. Arrange the broccoli in a single layer on a baking sheet, then season with sea salt and black pepper.
Roasting
  1. Roast the broccoli for 20 to 30 minutes, stirring occasionally, until the edges are lightly browned.
Cooking Pasta
  1. Prepare the whole wheat penne according to the package directions, then drain.
Making Garlic Butter Sauce
  1. Melt the butter in a large saucepan over medium-high heat.
  2. Add the mushrooms and minced garlic to the melted butter, season with sea salt, and cook while stirring frequently until the mushrooms are soft and lightly browned, about 15 to 20 minutes.
  3. Mix in the flour only if excess moisture remains in the mushroom mixture.
Assembly
  1. Add the cooked penne to the mushroom and garlic butter sauce and stir until evenly coated.
  2. Fold the roasted broccoli into the pasta mixture.
  3. Finish with sharp, hard cheese and serve hot.

Notes

Reserve some pasta water to loosen the sauce if it becomes too thick.
