Ingredients
  

Pasta
  • 2 cups whole wheat pasta
Shrimp and sauce
  • 9 oz / 255 g raw shrimp, peeled and deveined
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 3/4 tablespoon Mexican seasoning
  • Salt and pepper, to taste
  • 6 oz / 170 g enchilada sauce
  • 2 oz / 55 g light cream cheese
Vegetables
  • 2 bell peppers, thinly sliced
  • 1 onion, thinly sliced

Method
 

Preparation
  1. Cook the whole wheat pasta according to the package directions, then drain it and set aside.
  2. Cook the sliced bell peppers and onion in a heavy-duty skillet over medium-high heat until browned, stirring occasionally.
Cooking
  1. Melt the butter in a large saucepan over high heat.
  2. Add the minced garlic and shrimp to the saucepan.
  3. Season the shrimp with Mexican seasoning, salt, and pepper, then cook for 4 to 6 minutes until the shrimp are opaque and fully cooked.
  4. Mix the enchilada sauce into the shrimp mixture.
  5. Add the cooked pasta and browned peppers and onions to the shrimp and sauce, then stir until combined.
  6. Lower the heat and add the light cream cheese.
  7. Stir until the cream cheese is melted and the sauce is smooth, adding additional enchilada sauce or cream cheese if needed to adjust the thickness.
  8. Add more Mexican seasoning if desired, adjust the seasoning, and serve hot.

Notes

Use low heat when incorporating the cream cheese into the sauce to help maintain a smooth texture.
