  • 1 stick butter, melted
  • 1 cup sour cream
  • 1 box corn bread mix
  • 1 can regular corn, undrained
  • 1 can creamed corn
  • 1 egg, beaten

  • French fried onions, for topping

Method
 

Preparation
  1. Heat the oven to 350°F / 175°C and grease a 2-quart casserole dish.
  2. Mix the melted butter, sour cream, and beaten egg together until combined.
  3. Fold the corn bread mix, undrained regular corn, and creamed corn into the butter mixture until evenly incorporated.
  4. Transfer the corn mixture into the prepared casserole dish.
Baking
  1. Bake the casserole for 35 minutes.
  2. Sprinkle cooked bacon or French fried onions over the top, then return the casserole to the oven for 10 additional minutes. Add scallions after removing the casserole from the oven if using.
  3. Confirm the center is set before serving the casserole warm.

Notes
