Preparation
- Preheat the oven to 450°F (232°C).
- Melt the butter and oil together in a small skillet over medium-high heat.
Cooking
- Add the sweet corn, cumin, and chili powder to the skillet and cook while stirring occasionally until the corn develops a golden color.
- Mix in the jumbo lump crab meat, sour cream, and half of the chopped chives. Reduce the heat to low and warm the mixture for 3 to 4 minutes, stirring gently.
Assembly
- Cover a baking sheet with aluminum foil and arrange a single layer of tortilla chips over the surface.
- Spread half of the crab mixture over the chips, then add half of the shredded white cheddar cheese.
- Place another layer of tortilla chips on top, then add the remaining crab mixture and finish with the remaining white cheddar cheese.
Baking
- Broil the assembled nachos for 3 to 5 minutes until the cheese is melted and bubbling.
Serving
- Remove the nachos from the oven and top with the reserved chives, chopped bacon, and avocado pieces before serving.
Notes
Add the avocado after broiling so it stays fresh and maintains its texture instead of becoming soft.
