Ingredients
  

Wet ingredients
  • 1/2 cup packed brown sugar
  • 1/4 cup soft tub light margarine or butter
  • 1 tablespoon egg whites (optional)
  • 1 teaspoon vanilla
  • 2/3 cup chickpeas, drained and rinsed
  • 1/4 cup peanut butter
Dry ingredients
  • 2/3 cup flour (whole wheat or regular)
  • 1/4 cup rolled oats
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
Mix-ins
  • 1/2 cup dark, milk, or semisweet chocolate chips

Method
 

Preparation
  1. Mix the brown sugar with the margarine or butter in a large bowl until well combined.
  2. Add the chickpeas, optional egg whites, and vanilla, then blend the mixture until the chickpeas are smooth.
  3. Stir in the peanut butter until evenly incorporated.
  4. Add the flour, rolled oats, baking soda, and salt, then mix until a soft dough forms.
  5. Gently fold the chocolate chips into the dough.
  6. Serve immediately, refrigerate the dough in an airtight container, or freeze shaped dough balls for later use.
Baking
  1. For baked cookies, heat the oven to 350°F / 175°C.
  2. Scoop the dough into cookies and bake for 7-10 minutes, until the edges are set and the centers remain slightly underdone.
  3. Allow baked cookies to cool before serving for a softer, chewier texture.

Notes

For raw dough, use pasteurized egg whites or leave out the egg whites.
