Preparation
  1. Prepare the white rice following package directions, then mix in fresh lime juice, chopped cilantro, and salt.
  2. Combine the chicken with chipotle peppers in adobo sauce, lime juice, cooking oil, and salt. Allow it to marinate for at least 30 minutes or overnight.
Cooking
  1. Cook the marinated chicken by grilling or pan searing over medium-high heat until it reaches an internal temperature of 165°F / 74°C.
  2. Let the cooked chicken rest for 5 minutes, then slice it into portions.
  3. Heat the pinto beans and fresh corn in a pan with a small amount of seasoning until warmed through.
Assembly
  1. Build each bowl with cilantro lime rice as the base, followed by pinto beans, sliced chicken, and fajita vegetables.
  2. Finish the bowls with salsa and cheese before serving.
