Preparation
- Tenderize the steak pieces to approximately 1/4 inch thickness if they are not already prepared this way.
- Season the steaks with salt, black pepper, and garlic powder, then allow them to rest for 10-15 minutes.
- Prepare the breading station with seasoned flour, beaten eggs combined with a small amount of buttermilk or whole milk, and seasoned breadcrumbs or crushed crackers.
- Coat each steak in the flour mixture, dip into the egg mixture, and finish by pressing into the breadcrumb or cracker coating.
Cooking
- Heat vegetable oil or peanut oil in a deep skillet to 325°F / 163°C.
- Fry the coated steaks for 2-3 minutes per side until crisp and golden.
- Use a meat thermometer to confirm the fried steak reaches an internal temperature of 160°F / 71°C.
- Move the fried steaks to a rack and rest for 5 minutes.
Gravy and Serving
- Prepare the white cream gravy by using the pan drippings, whisking in flour to create a roux, then slowly adding milk and seasoning with salt and black pepper until smooth.
- Serve the chicken fried steak topped with warm white cream gravy.
