Ingredients
  

Cake
  • 6 eggs
  • 13.25 oz (376 g) chocolate cake mix
  • 1/3 cup water
  • 1/4 cup vegetable oil
Filling
  • 1 tbsp powdered sugar, for dusting
  • 12 oz (340 g) peppermint, vanilla, or marshmallow frosting
Topping
  • 12 oz (340 g) whipped chocolate frosting
Garnish
  • Fresh cranberries and rosemary, for garnish

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Beat the eggs with an electric mixer for 5 minutes until they become frothy and pale yellow.
  3. Mix in the chocolate cake mix, water, and vegetable oil, then beat on low speed for 2 minutes.
  4. Line a baking pan with parchment paper, apply baking spray, and grease the sides.
  5. Spread the batter evenly in the prepared baking sheet.
Baking
  1. Bake for 12-15 minutes, until a toothpick inserted into the center comes out clean.
  2. Let the cake cool for 5-10 minutes.
  3. Dust a clean towel with powdered sugar, move the cake onto the towel, invert the pan, and roll the warm cake with the towel.
  4. Allow the rolled cake to cool before unrolling it.
Filling and Assembly
  1. Spread the peppermint, vanilla, or marshmallow frosting evenly over the cake surface.
  2. Roll the cake back up with the filling inside and position it seam-side down.
Frosting and Serving
  1. Cover the outside of the cake roll with whipped chocolate frosting, then lightly run a spatula through the frosting to form a bark texture.
  2. Decorate the yule log with fresh cranberries and rosemary, then slice and serve.

Notes

Roll the cake while it is still slightly warm to help reduce the chance of cracking.
