Preparation
- Warm a large skillet over high heat, add the olive oil, and allow it to heat.
- Place the chopped cauliflower in the skillet, toss to coat with oil, cover, and cook for 10-15 minutes until tender-crisp, stirring and checking regularly to prevent burning.
- Allow the cooked cauliflower to cool before blending.
- Line a pizza pan with parchment paper and set aside.
Baking
- Preheat the oven to 450°F / 232°C.
- Blend the cooled cauliflower with the eggs, cornmeal, and Italian seasoning until mostly smooth while keeping some small cauliflower pieces.
- Spread the cauliflower mixture onto the prepared pizza pan in an even 1/2-inch thick layer.
- Bake the crust for 20 minutes until golden.
Assembly
- While the crust bakes, mix the cooked shredded chicken with the barbecue sauce.
- Remove the crust from the oven and add the barbecue chicken, half of the mozzarella cheese, and the sliced red onions.
- Cover the pizza with the remaining mozzarella cheese.
Baking
- Return the topped pizza to the oven and bake for an additional 10-15 minutes until the cheese is melted and golden.
Serving
- Finish the pizza with fresh cilantro, let it rest for 3-5 minutes, then slice and serve.
Notes
Dry excess moisture from the cooked cauliflower before blending to help the crust maintain its shape.
