  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • Pinch of salt
Wet ingredients
  • 1/4 cup sugar
  • 1/2 cup maple syrup
  • 1/2 cup banana puree
  • 1/2 cup oil
  • 1/4 cup water, plus additional as needed for frosting consistency
  • 1 beaten egg (or 4 teaspoons flax for vegan option)
Peanut butter topping
  • 1/4 cup natural peanut butter
  • 2 tablespoons sugar

Method
 

Preparation
  1. Heat the oven to 350°F / 175°C and grease a 9x9 baking dish.
  2. Combine whole wheat pastry flour, baking powder, baking soda, salt, and flax if using in a large bowl.
  3. In another bowl, mix sugar, maple syrup, banana puree, oil, water, and beaten egg until combined.
  4. Add the wet mixture to the dry ingredients and stir until just combined. Spread the batter evenly into the prepared baking dish.
Baking
  1. Bake the cake for 20-24 minutes, until a knife inserted into the center comes out mostly clean.
Topping
  1. Whisk natural peanut butter, sugar, and additional water as needed until the topping is smooth and spreadable.
  2. Allow the cake to cool completely, then cover with the peanut butter topping and slice to serve.
