Ingredients
  

Spicy Fries
  • 7 to 8 medium Idaho baking potatoes
  • 2 egg whites
  • 1 tablespoon chili powder
  • 1 tablespoon seasoning salt
  • 1 1/2 teaspoons smoked sweet paprika
  • 1/2 teaspoon cayenne
  • Coarse sea salt, to taste
Garlic Cheese Sauce
  • 2 oz / 55 g (57 g) light cream cheese
  • A splash of milk
  • 1 teaspoon minced fresh garlic
  • 1/2 teaspoon seasoning salt
  • 1 teaspoon oil
  • 1 oz / 30 g (28 g) shredded melting cheese of choice

Method
 

Preparation
  1. Preheat the oven to 430°F / 220°C.
  2. Wash and dry the potatoes, then slice them into french fry strips about 3/4 inch wide.
  3. Coat the potato strips with the egg whites, then toss with chili powder, 1 tablespoon seasoning salt, smoked sweet paprika, cayenne, and coarse sea salt.
  4. Place parchment paper on baking sheets and spread the potatoes across the parchment, keeping any extra egg white behind.
Baking
  1. Bake the fries for 10 minutes.
  2. Remove the parchment paper and move the fries directly onto the baking sheets.
  3. Bake for another 5 to 8 minutes, then carefully stir the fries.
  4. Continue baking and stirring at intervals until the fries are puffy and golden brown, about 25 to 35 minutes total.
Garlic Cheese Sauce
  1. Microwave the cream cheese for 30 seconds until melted.
  2. Whisk the melted cream cheese with milk, minced garlic, 1/2 teaspoon seasoning salt, and oil until smooth.
  3. Add the shredded cheese and heat for another 20 to 30 seconds until melted.
  4. Whisk the sauce until smooth, adding more milk if needed for the desired consistency.
Serving
  1. Pour the garlic cheese sauce over the hot fries and serve.

Notes

Store the fries and cheese sauce separately in airtight containers. Reheat the fries in a 425°F / 220°C oven to help bring back their crisp texture.
