Preparation
- Preheat the oven to 430°F / 220°C.
- Wash and dry the potatoes, then slice them into french fry strips about 3/4 inch wide.
- Coat the potato strips with the egg whites, then toss with chili powder, 1 tablespoon seasoning salt, smoked sweet paprika, cayenne, and coarse sea salt.
- Place parchment paper on baking sheets and spread the potatoes across the parchment, keeping any extra egg white behind.
Baking
- Bake the fries for 10 minutes.
- Remove the parchment paper and move the fries directly onto the baking sheets.
- Bake for another 5 to 8 minutes, then carefully stir the fries.
- Continue baking and stirring at intervals until the fries are puffy and golden brown, about 25 to 35 minutes total.
Garlic Cheese Sauce
- Microwave the cream cheese for 30 seconds until melted.
- Whisk the melted cream cheese with milk, minced garlic, 1/2 teaspoon seasoning salt, and oil until smooth.
- Add the shredded cheese and heat for another 20 to 30 seconds until melted.
- Whisk the sauce until smooth, adding more milk if needed for the desired consistency.
Serving
- Pour the garlic cheese sauce over the hot fries and serve.
Notes
Store the fries and cheese sauce separately in airtight containers. Reheat the fries in a 425°F / 220°C oven to help bring back their crisp texture.
