Ingredients
  

Pumpkin Pasta
  • 2 cups dry whole grain shells
  • 1/2 cup pumpkin puree
  • 1 oz / 30 g light cream cheese
  • 1/4 cup fat-free evaporated milk
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon salt
  • Freshly ground black pepper, as needed
Topping
  • 1/4 cup cooked, crumbled bacon
  • 1/4 cup sliced scallions or green onions

Method
 

Cooking
  1. Prepare the whole grain shells according to the package directions, cooking them slightly before al dente if desired.
  2. Drain the pasta and place it back into the pan.
  3. Set the pan over low heat and mix in the pumpkin puree, light cream cheese, evaporated milk, minced garlic, salt, and black pepper.
  4. Stir gently over low heat until the cream cheese has melted and the pumpkin sauce is smooth and heated through.
Serving
  1. Portion the pumpkin pasta into two bowls.
  2. Finish each serving with crumbled bacon and sliced green onions before serving.
